Recipes

I didn't have a New Year's Resolution.  I just wasn't into it this year.  There are, of course, plenty of things that I would like to improve upon this year.  Right now, one of those things is cooking.  I am so sick of the things that I usually make, but I just don't enjoy cooking that much.  On rotation in our kitchen are things like spaghetti, tacos, pork chops, swiss cheese chicken and crock-pot pot roast.  All extremely easy, fast and not too hard on a lactose-intolerant stomach.  With the internet at my fingertips I really have no excuse not to try new recipes.  The other night, I made some delicious (if I do say so myself) tilapia.  The recipe is from here.  I danced with this "Mommy" growing up and have been following her on Facebook, but this is the first recipe I've tried.  I'm sure I will try more after what a hit this dish was.  Next time, I will take it a little easier on the dill in the sauce though.
On Friday, I plan on going to the grocery store with a long list of ingredients to make some things I found on FoodNetwork.com.  I'm going to try Asian Chicken burgers, Pork Chops with Apples and Garlic Smashed Potatoes, Broiled Halibut with Ricotta-Pea Puree, Lemon-Garlic Shrimp and Grits and I would like to find some kind of good veggie pasta to make.  I'm listing these to hold myself accountable and maybe I will even do a review on each.  These recipes are from the "healthy" section, so that makes me feel pretty good:)  Also, I never like to try things with too many ingredients (it's too intimidating) and these seemed to fit the bill.
Currently, my crock-pot is making Beef Stroganoff that I stole from Eleanor's blog.  She actually got it from another blog, but that link will get you there.

    I've been making chicken enchiladas that y'all would like! I'll try to remember to send you the recipe!

  2. I know what you mean! I do not really enjoy cooking either! I'm not very good about working ahead, so I'm always trying to make something that can be done quickly because I'm usually starving!Ugh! I haven't gotten very adventurous with pork or beef because it's usually not worth the effort/expense.

    A few recipes that I like include a chicken pesto pizza, a tomato, corn and pesto pizza, baked tialpia, salad with grilled chicken or grilled salmon on top and a homemade dressing, asian chicken salad, meatloaf, pesto chicken, spinach, ham, cheese and mushroom quiche, a salmon and asparagus pasta with lemon sauce(or you can use chicken or sea scallops or shrimp instead of salmon), sante fe soup, chicken tortilla soup, chicken enchilladas, an orzo salad with edamame, tomatoes and topped with grilled tialpia, bisquick chicken, and chicken piccata. For sides, I love steamed brocoli, baked sweet potatoes, Stouffer's Spinach souffle or Corn souffle, baked tomatoes, steamed asparagus, and fresh fruit. Eleanor makes really good homemade lasagna, turkey burgers, and chicken pot pie that you might try and my mom makes a delicious bolganese sauce (like a substitute for regular spaghetti) and wonderful chicken and dressing in the crock pot.
