Pinterest Recipes

I have a rare Friday off tonight and actually feel like blogging.  We just got done with dinner.  I made a Pinterest recipe that was pretty good.  I have been all about the Pinterest recipes lately, but they don't all turn out so well.  Tonight, I made Cheesy Quinoa Mac-n-Cheese.
Harper ate a little bit, although she hasn't been a big fan of dinner lately.  Kyle can't have too much (since I loaded it down with cheese), but he stole several bites from Harper's plate.  I think he likes quinoa a little more than I do, but so far, this is my favorite way to prepare it.

This first recipe I ever made from Pinterest was Blackened Chicken with Quinoa and Avocado Sauce.  It's one that I will definitely make again, but with extra avocado sauce next time.  The whole meal is also gluten free.  The avocado sauce is so good!  It's just greek yogurt and avocado flesh.  I could eat it on everything.  Does everyone like avocados as much as Texans?  I have also been obsessed lately with an Egg and Avocado Salad recipe that I found on Pinterest.
   
The other night, I made Toddler Muffins.  They have bananas, squash and carrots in them.  They were pretty tasty fresh out of the over, but no one really went back for seconds.  Kyle liked them more than Harper:)  I think they would be really good with some walnuts in them, but that would make them less "toddlery."  I have Jessica Seinfeld's cookbook with a lot of great ways to hide veggies and I should really be using it more often.

Oh yeah, I forgot that I made Skinny Red Potato Salad for a cook-out a while back.  It was good, but I made way too much of it.  I'll definitely make it again though!

Oh, and I have also been baking salmon like this.  So good!

I have made a couple of things that I didn't really care for.  This Honey Lime Chicken was just okay.  The soy sauce was really overwhelming.  If I make it again, I will definitely do kabobs.  I think it would be okay with some pineapple and red peppers and a little less soy sauce.

My epic fail were these Mini Peach Cobblers.  I'm not really sure what happened.  They seem so easy, but mine looked horrible and tasted even worse.  I made them one night when we were having company, and I didn't have a back-up.  We all just had vanilla ice cream for dessert.  Oops:)

In June, I scheduled my meals in advance for the entire month.  I still went to the grocery store once a week, but that's actually pretty good for me.  I didn't do that this month, but I am going to start on one for August right after I'm done writing this blog.

Since I have been cooking so much lately, Kyle has been doing a lot of dishes:)

Now, if Harper would just hold up her end of the bargain and eat something, I would be a happy camper.  I continue to offer her stuff over and over.  I always give her whatever we're eating for dinner, but she won't even try half of it.  Any ideas?

Harper was sick last week and I've been sick all this week, so we've had a lot of movie days lately.  (She will always eat popcorn:))

  1. I laughed out loud about Kyle doing the dishes!! Brad does them every night around here. He used to think it was frustrating, but he's been doing them so much that now he says its "theraputic" for him! Brad made up his own rap to the tune of "All I do is win, win, win." He sings "All I do is clean,cleanclean!"

    I made Quinoa and Brown Rice combo from a box recently - we all liked it pretty well. Didn't go back for seconds but we all ate it the first night. I also made stuffed eggplant! I saw it in the grocery adn wanted to try it. It was pretty good too - tasted like a stuffed mushroom. Annie loved it the most and had it two nights in a row! Girl will eat anything and if its something she hasn't had before, she's almost gaurenteed to like it. This is awesome - but keeps me on my toes for new foods to give her. She will leave you hungry if I share a meal with her and I feel like she is already eating me out of house and home! :) I don't know how to help with Harper not trying foods, but I can imagine that it so frustrating!! Wish we could all have a meal together!

    Ill send you a bran muffin reciepe that I make all the time! I add bananas and pecans for a banana nut muffin or blueberries. Annie LOVES them. They are not all that healthy though because they have sugar, flour, buttermilk, etc. But, it might be a good start and you could substitute things...? OH, and I made orzo with roasted zuchinni and red bell peppers and grilled onion. Annie and I loved it too!! Did make the dressing adn it was a little strong - maybe slightly less lemon juice. But, otherwise delicious!
